Approved foods for CFO

    I make Vegan/Allergy Friendly baked goods such as donuts and cake. Instead of baking with eggs in my recipes, I use store bought apple sauce as my “egg” that doesn’t contain any additives such as citric acid, it’s just apple sauce. Is this an approved food to use as a CFO? The list of approved foods for California (Los Angeles region) says you can make fruit pies, but I’m guessing the fruit has to be canned with a certain percentage of pectin or citric acid, so I’m thinking if you can make fruit pies, I should be able to use apple sauce when baking? The law is very vague.

    I’m going to answer my own question lol for anyone wondering as I did call environmental health to find out the answer. I am allowed to use apple sauce in place of eggs. They said as long as the finished baked good was “dry” apple sauce in place of eggs is fine.
