I would recommend talking with the health dept about what they’d be okay with. Some officials are more strict than others.
Also, I’ll add that despite the ridiculous requirement (IMHO) of having a startup submit every possible label variation before they’ve even started their business, in my experience most people do tweak their recipes…[Read more]

David, you’re a genius! Thank you! I don’t know why I didn’t think about a used scale. This one you’ve linked to is perfect and not too expensive. I love this community!

I wonder if you could get a used one. Also I just checked WebstaurantStore and they have one for $100: https://www.webstaurantstore.com/14309/legal-for-trade-scales.html?order=price_asc

Yes, David, I agree, they are strict! And it is seemingly near impossible for me to locate an affordable one. The one the DC govt suggested I buy is $300. So, now I’m a little discouraged.

Wow that’s surprising that they’re that strict! I have never looked into NTEP scales, so I’d be interested to hear what you learn.

In order to obatin a business license for a cottage food business in DC, I need to purchase an NTEP certified scale. Does anyone have one they can recommend? Preferably available on Amazon? Many thanks in advance for your help.

I have a question. I know that in Ohio it says that a prohibited item for a cottage bakery is chocolate covered fresh fruit. I make chocolate covered cherries using maraschino cherries. They are very shelf stable. Are these an allowable item? It’s kind of a gray area so any input or advice will be appreciated. Thank you!

Just a last quick note…
What did I tell you?
Well, it’s 7am in my corner of the world, I’d supposed to be already up and getting ready for work, while instead I’m still in bed listening to Zydeco music 🤣Roberto Martini replied to the topic Help with Hard candy mystery in the forum Confections 3 years ago
Hi Jessie! (And thanks to David for relaying your previous message)
Glad to hear you succeeded in replicating your so persistently sought-after crunchy effect, I presume that the code you cracked turned out to be something like C₆H₁₂O₆ … Dan Brown would be proud of you :-)The trick you’ve devised makes sense indeed… Since glucose (the ma…[Read more]
