Hi, I recently graduated from CNM with a culinary degree with a concentration in Baking & Pastry. I am trying to start a cottage cake shop from my home. What do I need to do? I already have my degree, and my food handlers , not sure what else I need?

In NY it says you can make spice and seasoning mixes with commercially dried herbs and spices for repackaging. Can I use peppers that I grow and dehydrate to make my own powders and seasonings?

well I would love to know where I fall into the cottage laws in NM. I basically will be a personal chef in my clients home/kitchen. I will cook and prepare all foods for the tea party in my clients home. I will bring all my own cooking and baking utensils. I will take a healthdept. food handling class and register my business name with nm tax and…[Read more]
Since it doesn’t happen in your own home, and you’re cooking specifically for someone else, that doesn’t relate to cottage food laws. You would be working with the health dept to get licensed as a personal chef, I think. Beyond that, I don’t know much about the requirements for becoming a personal chef.

I don’t think that spice blends are allowed, but I’m not completely sure, since the law recently changed. If you could sell them, it would only be at farmers markets. You can contact the health dept to check.

No — to sell pet food in Illinois, you need to use an approved facility, and you need to contact the ag dept.

The cottage food laws are only if you want to use your home kitchen. You could use the cottage food law to sell your seasoning, but you’d have to adhere to the restrictions listed under the law.
If you want to ship and/or sell out-of-state, you’ll need to use a commercial kitchen and get the appropriate license from the health dept. It will…[Read more]

Unless you are only selling dried herbs, spice mixes aren’t allowed in Missouri. http://forrager.com/law/missouri/
I believe you need to prepare them in a commercial kitchen. http://forrager.com/faq/#commercialDavid replied to the topic Spices in the forum Dry Goods 10 years ago
It depends on the state. They’re allowed in a number of states.

As a Personal Chef, I often prepare breakfast items, in the client’s home, which can be frozen and enjoyed at a later date. As of now, I am combining all of the ingredients in the client’s kitchen. It would be much easier and a great time saver to mix the dry ingredients at (my) home and simply add the wet ingredients when I’m ready to prepare -…[Read more]

The main thing is that you will need to reach out to your health dept and get a permit to sell. Please note that the law just changed this year, and that should make the permitting process much easier. https://forrager.com/law/new-mexico/
