I was pretty excited to learn about Cottage baking and the freedom in East Tennessee to sell what I make in my home. As far as I know, fermented foods are not allowed under VA’s basic cottage food law. However, you can sell up to $3k of acidified foods, including pickles (non-traditional) and hot sauce.
You MIGHT be able to use VA’s home food processing law to sell more than that, but I’m not sure how many ag dept allow home food processing operations.

Yes, hot sauces would be considered an acidified food, and as long as yours stays below a 4.6 pH, then you should be able to sell it with VA’s basic exemption. I’m surprised that there are that many that don’t allow homemade food. Have you spoken with the market managers to confirm that they’re aware of the new law and they are intentionally preventing home food businesses from selling there?
