If you’re just using a teaspoon or two of vanilla extract in a cookie recipe, then you don’t need to worry about it. But if it’s a significant amount of alcohol, then you need to talk to your health dept to learn about what permits are necessary.

the cottage food laws don’t allow for foods like salsa’s, or pickled foods? anyone know where I can find info on laws specific to those types of foods? Thanks!

It should be true, but there are some counties with weird ordinances. You can check with your local ag dept, but usually you don’t need a license from them to sell produce. You may need a business license or something else from other depts in your county, though.

I really don’t know. My guess is that the added processing would require you to make it in a commercial kitchen. I doubt you’ll be able to find specific info about creamed honey online — you should just talk to the dept.

Coconut Milk Ice Cream?
Hi, I’m wondering if it would be allowed to make ice cream from pasteurized coconut milk? There are no eggs used. Just coconut milk, xanthan gum, coconut sugar or honey and either chocolate or fruits.

What is the definition of baked candy? Are chocolate candies (ie: dipped pretzel rods, turtles, truffles) allowed under either the cottage law or the home kitchen operation? What about chocolate covered fruit, like chocolate covered strawberries, or caramel apples that are also dipped in chocolate?
I actually don’t know what kind of candy that refers to, but some state’s laws do say that baked candy is allowed, so I figure there must be some kind of candy that falls under that category. Have you received your permit from your environmental health dept yet? If so, then you can start selling now. After you start your business, you have a 3-month window to get training. However, online training is much simpler and could happen today… unless you’d rather take a class in-person.
I wasn’t aware of the online training and I already purchashed the class for $90. bucks….darn. (i’ma checka nd see if I can get a refund.)

I think the main reason is that they just don’t need to. Farmers markets are so popular that most of them have an abundance of sellers lining up. Some have a year-long waiting list. There are also some markets that only focus on produce, which is understandable.

I haven’t heard of someone getting a barcode, but I’m sure it has been necessary for some indirect sales. If it were me, I’d wait until you have deals with the retail stores, and they can let you know if you need a barcode. They may not require one, or they may put a sticker on themselves.
