im i N.M. im dehydrating my own spices and making my own rubs and mixes, it that allowed in NM no clue how to start out and whats required to sell at farmers market.

Yes that is allowed in NM. You need to take a food safety course and depending on your area, you might need a permit from the health dept as well. Read through this page, especially the Business section: https://forrager.com/law/new-mexico/

I am just beginning my “cookies and other assorted sweets” home-based business in SC and am a bit nervous about the sales tax idea. My understanding is that our county does not require me to have a business license but that I DO need to get a tax ID number. Any wisdom out there?

I’m not sure, but I will say that sales tax requirements are very dependent on the area that you live. Someone one county over might have different requirements. I’d recommend visiting a local farmers market and ask the vendors what they’ve learned about licensing and taxes.
