Hi, I recently graduated from CNM with a culinary degree with a concentration in Baking & Pastry. I am trying to start a cottage cake shop from my home. What do I need to do? I already have my degree, and my food handlers , not sure what else I need?

well I would love to know where I fall into the cottage laws in NM. I basically will be a personal chef in my clients home/kitchen. Since it doesn’t happen in your own home, and you’re cooking specifically for someone else, that doesn’t relate to cottage food laws. You would be working with the health dept to get licensed as a personal chef, I think. Beyond that, I don’t know much about the requirements for becoming a personal chef.

As far as I know, owning a smoothie shop will require you to setup a commercial kitchen, with inspections from the health dept. As long as you’re going to do all of that, you might as well also use it for making your dried fruit. I don’t think your shop can sell homemade goods.

The main thing is that you will need to reach out to your health dept and get a permit to sell. Please note that the law just changed this year, and that should make the permitting process much easier. https://forrager.com/law/new-mexico/
