I am a registered cottage food operator with my county health department in Illinois.
The Illinois Cottage Food Law is ambiguous about WHEN cottage food must be packaged and labeled.

It is true that some states allow you to withhold an address on a label if you are listed in a phone book. While I understand that it may be annoying for customers to show up uninvited, it’s worth noting that I haven’t heard of this becoming an safety issue for anyone. The “by appt only” sign is a good idea.

Obviously that greatly depends on what you’re selling and what the market is like. I think the best advice is to seek out other vendors (in advance) who have sold there in the past, and ask them what mistakes they made, how much they prepare, how much they usually sell, etc. It might take some legwork but it can save you a lot of time and…[Read more]
