This site is so helpful! How do you cool your cakes? Do you just let them naturally cool and then crumb coat them…or put them in the fridge first and then crumb coat? I am wanting to start a candy business using my hazelnuts from my farm I live in Oregon and red under the rules that candy is exempt from agricultural licenses. I’m wondering can I sell online without a license?

I am new here and having trouble finding rules/laws for selling candy online. For years I have made Carmel popcorn for friends and family and I’m considering mail order/online sales. Can anyone help with Oklahoma laws. As far as I can tell it only baked goods. Thank you in advance

Three Questions:
1. Are FRIED doughnuts considered a bread or pastry?
2. Are FRIED doughnuts considered a non-hazardous baked good?
3. Are FRIED doughnuts allowed to be sold as a cottage food at Illinois Farmers Markets?
