I’d recommend checking with your local ag dept. Because it’s generally low-risk, sometimes there are special rules that allow someone to sell home-brewed coffee, or even coffee that’s brewed on-site (like at a market). This likely would not fall under the regulations for PA’s limited food establishments. If the ag dept requires a permit to do…[Read more]

Hello All,
Hoping someone can give me direction on this, I’ve searched to the best of my abilities with no luck , and may have possibly missed it. What are the regulations with brewing coffee at home to then sell outside the home? Only things taking place within the home would be the brewing of the coffee an it being put into a container.

I have a question about selling pickles at my local farmers market on the Big Island – after looking at the food that’s prohibited ( sauerkraut, kimchi, pickles?!) What are the most current (2021 ) allowed foods and if pickles are not included why not? I use a 5% vinegar which is the recommended strength even for commercial manufacturing

I recently saw this on BakeDeco Coupons at reecoupons, there is a huge discount available on it, but at that time I didn’t know about it, after reading your post I came to know it’s a very useful product for baking, now I am thinking to buy it.

Am I correct in thinking I cannot use cream cheese frosting as a cottage food operation? I am in Virginia, and I see that Buttercream frostings are considered “borderline” meaning acceptable. Does cream cheese frosting require refrigeration for the finished baked good?

Hello all! As a CFO in FL, I am struggling understanding shelf-stability in particular items -why certain ingredients/baked goods would need refrigeration, while others do not. For instance- in this recipe for Red Velvet Cookies (https://sallysbakingaddiction.com/cream-cheese-stuffed…/) – its ok to leave them at room temperature even though they…[Read more]
Because it’s not always apparent when things are shelf-stable and when they are not, FL does not allow anything with cream cheese or butter (though butter in something thoroughly baked is allowed).
Regarding the science of it, there are a lot of variables at play. In general, sugar is a stabilizer that will make something more shelf-stable.…[Read more]
Thanks David. What about fudge? Is that allowed in FL?
Yes fudge should be allowed. https://forrager.com/law/florida/#food

I have just begun making shrubs – the fruit syrup and vinegar mixture. I am trying to find information about what I need to do to safely bottle and store this for sale.

As far as I know, the rules for Hawaii haven’t changed recently. The reason many states don’t allow canned foods is due to botulism concerns, which could potentially be deadly. Canned foods, when properly prepared, are perfectly safe, but their concern is that a home cook might not properly prepare them. I’m not saying that I agree with the…[Read more]
