Hi there,
I am a french pastry chef. It’s a long story but I will try to make it short.
Basically a friend’s let me rent his kitchen, therefore I created a business LLC, got a tax id number a business license, an occupational license. Now my friend cannot let me use his kitchen anymore and I am wondering what do I need to do in order to put my bus…[Read more]You need to find another commercial kitchen to cook from, since the current law in LA doesn’t allow pastries, so you can’t make the products at home. You can ask the health dept what commercial kitchens might be available around you.
I gave my information to become a CFO, gave my tax ID number, and my occupational license what is next? Do I have to become a LLC
You do not need to become an LLC: http://forrager.com/faq/#llc

You can’t do this from your home kitchen. You can build another kitchen onto your home, but this can be really pricey. http://forrager.com/faq/#commercial

Try calling your health dept to see if they would consider your syrup a “preserve”, in which case it would be allowed under the cottage food law. They probably will not allow it, and if they don’t then your business can’t be done from home. You’d need to use a commercial kitchen. http://forrager.com/faq/#commercial

Probably the only way would be to propose an amendment in the next legislative session.

Jammy, you can sell your biscotti, since that’s considered a cookie. I believe you can use wild yeast to make them.
I am not sure what you are asking about with the fresh fruit. Can you clarify?

Are pecan pies allowed?
I’m not sure if those would be allowed, due to the relatively high egg content usually found in pecan pies. You should contact your health dept to see what they will allow.
