Am i allowed to make cinnamon rolls? And also “gourmet breads” with fruit such as sweet white bread with blueberries. I have made before (does not need refrigeration) but obviously fresh bread needs eaten within a week or so otherwise it gets moldy (but that’s standard). Can i make spice mixes? Such as a rub made for BBQ chicken, etc. Also could i sell baklava? I would presume almost anything along the lines of tarts, croissants, eclairs, and baklava would be covered under pastries in ohio. But i just want to make sure.

You can make all of the things you described, as long as they don’t require refrigeration. You need to be incorporating fruits like blueberries or bananas into the batter (garnishing with fruits isn’t allowed).
