    I’m starting off with the simplest ingredient herbs, spices, seasonings by grinding dehydrated fruits and vegetables from local NC gardens. As a “low-risk” item which requirements is this niche exempt from and what exactly do I need to include in my labels for direct to consumer selling?

    You can do this with NC’s cottage food law. You are exempt from the requirements of needing to use a commercial kitchen for production. You can use your home kitchen by following the requirements described on this page: https://forrager.com/law/north-carolina
