    Hi! I’m a chef who has created an allergen friendly bar. I have interest from retailers but according to the current law, I must rent a commercial or commissary kitchen for production. There are NO nut, peanut, seed, dairy, egg, soy and sesame free kitchens for rent and my product is free of those items. In California they have a tier system for the cottage food law act and allow cooks to sell to retailers, whole sale and consignment if they purchase the second tier of the permit and get approved. Is Colorado going to follow suit?

    CO just amended their law and is unlikely to follow suit anytime soon. It sounds like you will need to build a commercial kitchen, either on your property or elsewhere.
