    Does anyone know the reason for jalepeno jelly be excluded on Colorado Cottage Food Act? Specifically mentioned everywhere I look? Is it dangerous? I’ve been making and eating it for years… with no weird side effects

    Peggy, jalapeño jelly definitely can be made safely. I think the reason it is excluded is because if you don’t follow the right process, the resulting product could be dangerous. Since cottage food operations aren’t inspected, they have decided that food businesses that make jalapeño jelly need to go through the process of becoming fully licensed, which would include the training necessary to insure the safety of the product.
