I’m interested in potentially making homemade Dark Chocolate Candied Bacon Bark to sell at farmer’s markets every once in a while. Are ALL meats in any form prohibited under the cottage laws? What if instead of cooking the bacon myself, I purchase pre-cooked shelf-stable bacon (which probably won’t taste as good, but if it’s my only option…)? Since it’s so darn hot here, I’d be selling my product in pre-packaged amounts from a cooler to keep the chocolate from melting. Would that disqualify it from being non-perishable?

Yes, all meats in any form are definitely prohibited. You need to use a commercial kitchen. http://forrager.com/faq/#commercial
