    Hey there,
    We contacted the state 6 months ago to ask about the approval of fermented beverages such as Kombucha and Water Kefir. I was wondering if there has been an update in the approval of such things?
    I know many people make fermented foods like Kimchi and Saurkraut and they are extremely safe to consume as the fermentation process prevents the formation of botulism and other dangerous bacteria. From what I understand, canned foods are much more hazardous to consume than fermented products.
    How can we apply to have fermented foods added to the approved food list on the Cottage Food Act?

    Hi Justine,
    I was wondering if you’ve made any progress getting licensed to sell fermented products. I’ve found it’s very hard to get any info in CA.

    Holly, I don’t think you’ll make much progress until you contact the health dept directly. It doesn’t appear that this will get added to the approved food list anytime soon.
