    Hi, I have a quick question in regards to condiments. I want to make a type of mayonnaise that I can make with either milk or raw egg but I don’t see these ingredients on the list. What the law says about these ingredients?

    Mayonnaise is not on the CA approved food list for Cottage Foods operators, so presently, it would not be approved no matter the ingredients.

    First of all, thank you for the response, very helpful.

    What about a type of aioli with only garlic and oil as ingredients (no dairy)? Is there any place I can call to get more details on what is allowed and what is not?

    Generally speaking, any type of food that needs to be refrigerated is not allowed. Homemade mayo and garlic/oil mixtures are not allowed, and you would need to use a commercial kitchen to produce them. http://forrager.com/faq/#commercial
